So, here’s my “lazy” meal prep approach, inspired by the amazing women in my family, to keep it easy and stress-free for the busy week ahead.
The Lazy Meal Prep Plan: Here’s How My Family Does It
Step 1: Bake or Slow Cook 1-2 Proteins
Keep it hands-off using the slow cooker and oven, freeing up the stovetop for other dishes.
- Roast a whole chicken or two
- Bake or slow-cook a batch of chicken breasts
- Bake salmon fillets
- Slow-cook a big batch of lentils
- Bake seasoned tofu for plant-based protein
Step 2: Prep 1-2 Carbs
Choose carbs that work for breakfast, lunch, or dinner—versatility is the name of the game!
- Cook a big pot of brown rice or quinoa
- Roast a tray of sweet potatoes
- Boil whole wheat or gluten-free pasta
Step 3: Chop and Prep Produce
If you’d rather skip washing and chopping, grab some frozen veggie mixes for convenience.
- Roast broccoli, cauliflower, and carrots
- Sauté a big batch of peppers and onions
- Prep a raw veggie tray for easy snacking
Step 4: Add Flavors
Here’s the fun part! To keep things exciting, whip up a couple of dressings, grab a few healthy pre-made sauces, or chop herbs in advance.
